Got a Houseful these School Holidays?
01 October 2013
Now that the school holidays are upon us there's every likelihood you'll be infested by a swarm of little people, many of them hanging around for the inevitable sleepover. Feeding and tidying up after them can become a chore and eat into your precious 'me-time', but if you're smart you'll shoo them outside and make sure the barbie has plenty of gas.
Here are a couple of ideas for feeding the small masses outside and avoiding the mess:
Barbecued Mince Pizza
- 500g lean mince
- 3 bacon rashers, chopped
- 1 large onion, finely chopped
- 1/2 tsp paprika & 1/2 tsp oregano
- 1 clove crushed & 3 tblspns tomato paste
- 250g sliced cheese (preferably mozzarella)
- 1 small green pepper and 1 tomato, sliced
- 1/2 tsp dried basil and 2 tblspns grated parmesan
Fry bacon until crisp. Combine mince, onion, paprika, oregano and garlic.
Press into a pizza pan, large cake tin or swiss roll tin. Spread evenly with tomato paste then cheese, bacon, pepper and tomato. Sprinkle with basil and parmesan.
Cover with foil and BBQ for 10 mins, uncover, drain off juices, BBQ until mince is cooked through and the cheese is melted. Drain again, chop and serve.
Ideal thrown into a burger bun or pita pocket with a few lettuce leaves to make you feel better about providing a balanced meal.
BANANA WRAPPED IN BACON
While you have the bacon out, chop some bananas into wedges and wrap strips of bacon around them then spear them with a toothpick. Throw these onto the barbie while you're waiting for the mince pizza to cook and you'll have a lovely little nibble to accompany your glass of wine while you're hanging around the BBQ! Fight off any small people that try to steal them, they are yummy...
