Mid-week meat patties with tomato and capsicum pasta sauce

There's nothing better than barbecuing when the weather is gorgeous, it makes every evening feel like it's the weekend. Here's our staple meat pattie recipe combined with a summery sweet tomato and capsicum pasta sauce:
Meat Patties
- 1 small or 1/2 large finely chopped onion
- 1 clove crushed garlic (optional)
- 600g premium mince
- A good slug of tomato sauce
- A handful of finely chopped fresh herbs or a good sprinkle of dried Italian herbs
- A teaspoon of beef stock
- 1 egg (optional)
- A splosh of soy sauce
- Ground black pepper
- Fresh or dried breadcrumbs
Combine all ingredients except the breadcrumbs and mix thoroughly with a wooden spoon. Add breadcrumbs and combine with slightly damp hands then form into patties. You can coat these in flour if you wish but I don't tend to bother.
Makes 6-7 large patties or 12 meatballs
Fire up your BBQ and cook on the hotplate till juices run clear.
SWEET TOMATO & CAPSICUM PASTA SAUCE
- 1 small or 1/2 large finely chopped onion
- 2 cloves crushed garlic
- 1 chopped yellow capsicum (or other colours if that's what you have in the fridge!)
- 1 can of tinned tomatoes in puree (or use tomatoes in juice and add some tomato paste)
- 6-8 quartered cherry tomatoes or other sweet fresh tomatoes
- A handful of fresh basil/oregano/parsely/rosemary - whatever thrives in your garden
- Salt and pepper
Fry the onions,garlic and capsicum till soft. Add tomatoes and let simmer until the fresh tomatoes are nice and mushy! Add fresh herbs and salt and pepper to taste. Serve over cooked pasta with a salad on the side...
